Rhubarb Berry Jam

If you have a rhubarb plant, chances are you have looked for some good recipes beyond just rhubarb crisp and rhubarb pie. I love crisps and pies as much as anyone, but it's nice to have some variety when you have a lot of rhubarb to harvest!

I made some Rhubarb Berry Jam last summer and it was so good and so easy, I just have to share the recipe with you. I found it on Allrecipes.com while I was looking for another good rhubarb recipe. The girls call it "Rhubarbarian Jam" (has anyone else seen Duke and the Great Pie War several times?). :-)

In a pot, combine 8 cups of chopped rhubarb with 3 cups of sugar and 1 can of blueberry pie filling. Bring to a boil over medium-high heat and continue boiling for 10 minutes while stirring. Stir in 1 package of strawberry gelatin and one package of raspberry gelatin until dissolved. If you'd like a smoother jam, puree before adding the gelatin. Enjoy!
